Medium: 20 minutes per 500g plus 30 minutes (if using a meat thermometer, internal temperature will be 60-66°C out of the oven, after resting in a warm place 66-70°C)

Well Done: 25 minutes per 500g plus 30 minutes (if using a meat thermometer, internal temperature will be 67-71°C out of the oven, after resting in a warm place 71-75°C)

Brisket
Pot Roast or Slow Roast, 180°C, 350°F, Gas mark 4-5: 30-40 minutes per 450g (lb) plus 30-40 mins.
